What Next...

It all started last week. I was at work on Wednesday and Kaelub called to tell me that Eli had a lot of goobers in his eye. So he called the doctor and got a prescription for eye drops. We gave him the eye drops, but on Thursday morning when Eli woke up, his eye looked swollen. To the doctor we went. And we found out our new insurance isn't so great and wouldn't cover anything. Terrific! When the doctor saw Eli his eye actually had cleared up and looked normal again. But she said he had an ear infection. We came home with a different prescription--for Amoxicillin. (Thankfully we didn't have to worry about our newly discovered not so great insurance on this one, since it was one of those $4.00 prescriptions.) Eli seemed to be doing better for a few days, but on Tuesday he started having a cough and runny nose. And it just got worse, so yesterday we took him back to the doctor. His ears looked fine, but now he has pneumonia! And this time the prescription was not one of the $4.00 varieties. Just a few more dollars at $150!! I'm ready for some health care reform here President O. So if any of you out there have any tips on some good, affordable insurance companies, let us know. I don't have it through my work since I only work 2 days a week and Kaelub owns his own business--so we have to get it ourselves. Oh, and we need something that offers maternity too, so Eli will have some siblings to play with. You wouldn't think that would be too hard to find, but believe me, it's been giving me too many headaches.
To end on a positive note though, I was called to be the 2nd counselor in the Young Women organization. I'm really excited to work with the Beehives--I'm trying to remember back to when I was one myself and all the fun things we did. It's going to be a fun adventure.

Corn & Potato Chowder

Here is the recipe for the corn & potato chowder I made a few weeks ago. It's really easy and it cooks in the slow cooker, which I love.

6-8 slices of bacon or turkey bacon cooked & crumbled
3 c. diced potatoes
1/2 c. chopped onion
3 c. chicken broth
1 can creamed corn
1 can whole kernal corn drained
1 tsp. salt
1/4 tsp. pepper
1 c. heavy cream

Combine all ingredients except cream in slow cooker. Cook on low for 8 hours. Add milk & cook for 30-45 min. longer. I served our soup with grated cheese on top & kept 1 slice of crubled bacon for garnish on the top also. I had bread bowls to put it in, which is always fun.

Happy V-Day







We decided to take Eli to the park today and enjoy the nice weather. Plus we figured it probably wouldn't be too busy since it was Valentine's Day. As you can see from the pictures, we all had a good time, but especially Eli. Kaelub took us to the famous Joe's BBQ for dinner---so good.

Here Comes the Sun




Eli was so glad to get back outside the last few days. It's been nice and sunny--perfect weather to play with his favorite toys in the back yard. As you can see, he loves any kind of ball. While we were playing an airplane flew over us and Eli pointed up at it with his eyes really big.

I Looked Out the Window...




And this is what we saw---Marble sized hail! It was really loud and I had to pick some up in my hand just to see how big they were. Kaelub and I thought it looked like snow, so we had to take pictures of it. Probably one of the few times our grass will look like it has snow. Eli loved the storm. We took him out on the back patio to watch the hail for a few minutes and he did not want to come inside. He actually threw a little bit of a tantrum when we made him come back inside. What a little stinker.

What a Week!



We have been sick. I think Eli got the worst of it though. He started throwing up Monday night. Wednesday was the last of the throw-up, but now he has a really runny nose. I think he passed it on to me and I gave it to Kaelub. But luckily things are looking better today. And Kaelub even brought home one of our favorite treats--red velvet Bundt cake. What a sweetie. I did manage to make a really good soup for dinner this week and it was so easy. I'll have to put the recipe on here. It's perfect when you don't have much time or don't really feel like doing much.

Mmm.....


I love oranges and it's one of my favorite things about living here. They are everywhere! We are lucky enough to have people in our ward who have a lot of citrus and they brought a truck full of oranges, grapefruit, and lemons for people to take home after church on Sunday. Yum! It makes me want to plant a tree in my back yard......
